Stuffed Baked Peaches

Peaches on a sunny day are always nice. While sinking your teeth into that first bite is pretty great, we’re raising the stakes! By adding some McVitie’s Digestives to the mix gives you that bit of crunch while a little brown sugar takes the taste of this dessert to a whole new level.

INGREDIENTS

  1. Preheat the oven to 180°C/350°F.
  2. Wash and dry the peaches, then cut in half and remove the pits¬. Use a teaspoon to make the hollow in the peaches about the size of a golf ball. Chop up the peach flesh that you have removed.
  3. Put the chopped peach into a bowl and mix it with the crushed McVITIE’S DIGESTIVES©. Add 2 tbsps of the sugar and all of the almond extract and mix thoroughly. Fill the hollowed-out peach halves with the biscuit and peach mixture.
  4. Grease a roasting tin or deep baking tray and arrange the peaches in one layer in the tin. Sprinkle the remaining sugar over the peaches.
  5. Bake for 30 minutes or until golden and soft. Serve drizzled with the cooking sauce.
